Ingredient 1: Asparagus
In season – NOW!!! Right now!!!
What to look for when buying – Stalks should be firm, not weak and flimsy. Asparagus should be green (or purple, yep, that’s a thing!) without bruising or brown coloring.
Flavor – A little bit bitter, but that can be tamed with roasting or grilling. Raw is more bitter than cooked, but can taste amazing with the right dressing! Thinner stalks will be less woody/chewy than their thicker counterparts.
Storage – Trim the ends of asparagus and keep them upright, with stems resting in a little bit of water. You can easily place them in small vase or a shallow bowl, cup or pan with a couple inches of water to cover the trimmed ends. Kind of like flowers!
